Recipe #2: Quesadilla con bifstec (steak quesadilla)
-this is another one of my favorite recipes.  Like arroz con frijoles, it is very easy to make (and very delicious)

Ingredients
  1. Steak (I prefer top round steak, but if you feel like spending some money, the strip steak is the best)
  2. Portabello mushroom slices
  3. 1 chopped red or yellow pepper, whichever you prefer
  4. 1/4 chopped onion
  5. 1 clove chopped garlic
  6. vegetable or olive oil
  7. adobo
  8. Shredded Mexican cheese
  9. 2-4 6-inch flour burritos


Directions

  1. Slice the steak so that into bite-size pieces.  Place a small amount of adobo seasoning over the steak.  Adobo is very potent.  Do not add too much.
  2. Over medium heat, sautee the onion and pepper for about five minutes in a large frying pan.
  3. Afterwards, add the steak, mushroom, and garlic to the frying pan.
  4. Stir this on medium/low heat for about twenty minutes or until the steak is completely cooked and the vegetables have a nice golden-brown color.
  5. Ladle the ingredients out onto one half of the burrito bottom.
  6. Sprinkle as little or as much cheese as you want on top. (Make sure that you can actually close the burrito!)
  7. Over mid/low heat, place the quesadillas back onto the frying pan and cook on both sides for ~5 minutes.
  8. That's it! Enjoy this very simple, but very good traditional Latin dish!
