Kimbap

Kimbap is the perfect food for breakfast, lunch, dinner, or a snack.  In other words, any time of day is good for kimbap!

Kimbap is made from rice (bap), vegetables, and various meats, all rolled together into dried seaweed (kim).  It may be a bit difficult for beginners to get the hang of, but as we all know, practice makes perfect.

To make kimbap, you will need rice (pre-cooked), squares of kim, strips of carrot, imitation crab, cooked spinach, pickeled radish, and scrambled egg (cook lightly to roll into strips).  Most ingredients can be found at an Asian or Korean market.

Here are some illustrated steps to make a traditional roll of kimbap:


rice1. On a bamboo rolling mat, place a square of kim in center.  Place a 1/4 cup of rice in center of kim and spread across square, leaving the top third empty.
ingredients2. Add strips of carrots, egg, pickled radish, cucumber, imitation crab, and spinach grouped together across the bottom third of the rice.
roll3. Begin rolling from the bottom up, like a sleeping bag, pressing hard to keep everything compact.  Be sure to continuously pull  the entire roll down to the beginning of the mat as you work.
cut4. When you reach the top, seal the empty top third of kim over roll with a bit of water or sesame oil. Brush the roll lightly with sesame oil, sprinkle with sesame seeds, and cut into 6 pieces.


Variations:

Add tuna (with mayo!), sesame leaves, raw fish, ground beef, kimchi, spam, anything you can think of!
