Here are some different ways to add vegetables to things you probably already eat! Remember to ask your parents first before using the kitchen-knives and stoves can be dangerous!

Mac n' Trees

Make your favorite dinner even better by adding broccoli and kale!

Ingredients (makes enough for four hungry people!)
1 recipe for Mac n' Cheese
1 bunch of broccoli
1 bunch of kale
1 teaspoon olive oil
1 Tablespoon lemon juice
1/4 teaspoon salt

Equipment
1 cutting board
1 sharp knife
1 heavy frying pan
1 wooden spoon for stirring

1. Make the Mac n' Cheese like you normally would.

2. While it is cooking, chop the broccoli into small pieces. Tear the leaves of the kale off the stems. Throw away the stems and chop the leaves into small peices.

3. Cook the broccoli first. Take a heavy frying pan and heat it up over high heat. Throw the broccoli in-don't worry about adding any oil! Cooking the broccoli dry, without any oil, will toast it and make it even tastier!

4. Push the broccoli around the pan with the wooden spoon every minute or so. Let the broccoli cook for 5 minutes. Then dump it into a bowl.

5. Cook the kale next. Put the oil in the pan first. Wait 1/2 a minute. Then put the kale in the pan. Push the kale around with the wooden spoon every minute or so. Let the kale cook for 5 minutes.

6. Add the lemon juice. Let the kale cook for another 2 minutes. Add the salt.

7. Turn off the stove, and wait for the Mac n' Cheese to be done.

8. Add the cooked broccoli and kale to the Mac n' Cheese and enjoy. Mmm mmm!

 

Squash Boats

Make fun squash boats for eating soup, spaghetti, or stuffing!

Ingredients (makes 4 squash boats)
2 squashes (delicata, acorn, or butternut)
2 Tablespoons olive oil
1/2 teaspoon salt
Food for filling each boat

Equipment
1 cutting board
1 sharp knife
1 heavy-duty spoon
aluminum foil
1 rimmed baking sheet
Cooking spray

1. Preheat the oven to 375 degrees. Cover the baking sheet with aluminum foil. Spray it with cooking spray.

2. Have your parents cut the squashes in half, hotdog style. Don't do this part yourself-it is very tricky!

3. Use the spoon to scrape all the seeds out of the squash halves. If you want to, you can toast them in the oven later and make a tasty snack!

4. Rub each squash half with olive oil. Sprinkle with salt.

5. Place each squash half face down on the greased baking sheet with aluminum foil.

6. Bake squash halves for 45-50 minutes.

7. Let squash boats cool for 10 minutes, then fill with soup, spaghetti, stuffing, or other food and enjoy. Yum yum!
